Details of talks given by Adam Allinson
Adam is the co-founder of The Canny Chocolate Company and the creative force behind its bold flavours, beautifully crafted chocolates, and playful, modern style. With a background in hospitality, food education, and artisan production, Adam trained extensively in professional chocolate work, confectionery techniques, and patisserie disciplines, developing a deep understanding of tempering, moulding, ganache formulation, and flavour balance.
His approach blends technical skill with a passion for teaching and storytelling. Adam has delivered chocolate demonstrations, workshops, masterclasses and educational sessions across the North East, sharing his love of the craft with WI groups, U3A audiences, schools, corporate clients, and community organisations.
At The Canny Chocolate Company, Adam leads on recipe development, product creation, demonstrations, and the design of the company’s signature experiences. His work focuses on transforming high-quality ingredients into chocolates that feel both luxurious and accessible — handmade with care, rooted in proper technique, and influenced by his belief that great chocolate should always bring a bit of joy.
